Ingredients

  • ½ lb boneless, skinless chicken thighs, cubed
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 Tbsp plus 1 tsp cornstarch, divided
  • 2 tsp olive oil
  • 1 cup fresh or canned pineapple chunks
  • 3 Tbsp pineapple juice
  • 2 Tbsp brown sugar
  • 1 Tbsp less sodium soy sauce
  • 1 green onion, thinly sliced

Instructions

  1. Sprinkle chicken with salt and pepper. Toss together chicken and 2 Tbsp cornstarch until chicken is well coated; discard remaining cornstarch.
  2. Cook chicken in hot oil in a skillet over medium-high heat 6 to 8 minutes or until browned.
  3. Meanwhile, whisk together pineapple juice, brown sugar, soy sauce, and 1 tsp cornstarch, stirring until cornstarch is dissolved. Reduce heat to medium-low; add brown sugar mixture and pineapple chunks to skillet with chicken, stirring to combine.
  4. Cook 12 to 15 minutes or until mixture is thickened and chicken is done. Serve over Sesame Jasmine Rice recipe; sprinkle with green onion.

  • 1 Tbsp sesame seeds
  • 1 Tbsp less sodium soy sauce

  1. Cook rice according to package directions. Stir in sesame seeds and soy sauce.
