Ingredients
- ½ lb boneless, skinless chicken thighs, cubed
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 Tbsp plus 1 tsp cornstarch, divided
- 2 tsp olive oil
- 1 cup fresh or canned pineapple chunks
- 3 Tbsp pineapple juice
- 2 Tbsp brown sugar
- 1 Tbsp less sodium soy sauce
- 1 green onion, thinly sliced
Instructions
- Sprinkle chicken with salt and pepper. Toss together chicken and 2 Tbsp cornstarch until chicken is well coated; discard remaining cornstarch.
- Cook chicken in hot oil in a skillet over medium-high heat 6 to 8 minutes or until browned.
- Meanwhile, whisk together pineapple juice, brown sugar, soy sauce, and 1 tsp cornstarch, stirring until cornstarch is dissolved. Reduce heat to medium-low; add brown sugar mixture and pineapple chunks to skillet with chicken, stirring to combine.
- Cook 12 to 15 minutes or until mixture is thickened and chicken is done. Serve over Sesame Jasmine Rice recipe; sprinkle with green onion.

- 1 Tbsp sesame seeds
- 1 Tbsp less sodium soy sauce

- Cook rice according to package directions. Stir in sesame seeds and soy sauce.
