Crisp Apple and Chicken Romaine Salad

Ingredients
- 1 (16-oz) pkg bacon, chopped
- 1½ lb boneless, skinless chicken breasts
- ¼ tsp salt
- ¼ tsp pepper
- 1 (3-count) pkg romaine lettuce hearts, chopped
- 3 apples, cored and chopped
- ½ small red onion, thinly sliced
- ¾ cup chopped walnuts
- ¾ cup freshly shredded Parmesan cheese
- ¾ cup balsamic vinaigrette
Instructions
- Cook bacon in a large skillet over medium heat 6 to 8 minutes or until crisp; drain, reserving 2 Tbsp drippings in skillet.
- Meanwhile, cut chicken in half crosswise, and pound to an even thickness between plastic wrap using a meat mallet. Sprinkle with salt and pepper.
- Cook chicken in hot drippings in skillet over medium-high heat 5 to 6 minutes per side or until done; slice chicken.
- Toss together lettuce, apples, onion, nuts, cheese, bacon, and chicken. Divide among 6 plates; drizzle with dressing.
