Crisp Apple and Chicken Romaine Salad

Ingredients

  • 1 (16-oz) pkg bacon, chopped
  • 1½ lb boneless, skinless chicken breasts
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 (3-count) pkg romaine lettuce hearts, chopped
  • 3 apples, cored and chopped
  • ½ small red onion, thinly sliced
  • ¾ cup chopped walnuts
  • ¾ cup freshly shredded Parmesan cheese
  • ¾ cup balsamic vinaigrette

Instructions

  1. Cook bacon in a large skillet over medium heat 6 to 8 minutes or until crisp; drain, reserving 2 Tbsp drippings in skillet.
  2. Meanwhile, cut chicken in half crosswise, and pound to an even thickness between plastic wrap using a meat mallet. Sprinkle with salt and pepper.
  3. Cook chicken in hot drippings in skillet over medium-high heat 5 to 6 minutes per side or until done; slice chicken.
  4. Toss together lettuce, apples, onion, nuts, cheese, bacon, and chicken. Divide among 6 plates; drizzle with dressing.
