Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • 3 Tbsp butter
  • 1 Honeycrisp apple, sliced
  • ¼ cup chicken broth
  • ¼ cup packed brown sugar
  • 2 Tbsp stone ground mustard 

Instructions

  1. Cut chicken in half crosswise and pound to an even thickness between plastic wrap with a meat mallet. Season with salt and pepper, if desired.
  2. Melt butter in a nonstick skillet over medium-high heat; add chicken, and cook 5 minutes per side or until browned and done. Remove from skillet, and keep warm.
  3. Add apples to drippings in skillet; cook until browned. Add broth, brown sugar, and mustard, stirring until blended. Bring to a boil, reduce heat, and simmer until slightly thickened.
  4. Return chicken to skillet, and cook 1 minute.

Side Dish Ingredients

  • 1 (8.8-oz) pouch microwavable butter and garlic rice
  • 1 (8-oz) pkg thin green beans
  • 1 Tbsp butter

Side Dish Instructions

  1. Heat rice according to package directions.
  2. Cook green beans according to package directions; place in a serving bowl, and stir in butter until melted. Season with salt and pepper, if desired.
