Ingredients

  • 6 zucchini, halved lengthwise
  • 1 (16-oz) pkg ground mild Italian turkey sausage
  • 1 cup marinara sauce
  • 2 cloves garlic, minced
  • ¾ cup freshly grated Parmesan cheese, divided

Instructions

  1. Preheat oven to 400°F. Scoop out seeds from each zucchini half using a spoon.
  2. Cook sausage in a large skillet over medium-high heat until brown and crumbly.
  3. Combine sausage, marinara sauce, garlic, and ¼ cup cheese. Spoon mixture into each zucchini half, pressing to fill evenly; sprinkle with ½ cup cheese.
  4. Place zucchini on a foil-lined baking sheet. Bake 15 to 20 minutes or until zucchini is tender.

Side Dish Ingredients

  • 1 (5-oz) pkg baby arugula
  • ¼ cup balsamic vinaigrette
  • ½ tsp freshly ground pepper
  • 1 (13-oz) loaf whole wheat French bread, heated

Side Dish Instructions

  1. Toss together arugula, vinaigrette, and pepper in a large bowl. Serve salad and bread on the side.
