Sausage-Stuffed Zucchini
Balsamic Arugula and Whole Wheat Bread

Ingredients
- 6 zucchini, halved lengthwise
- 1 (16-oz) pkg ground mild Italian turkey sausage
- 1 cup marinara sauce
- 2 cloves garlic, minced
- ¾ cup freshly grated Parmesan cheese, divided
Instructions
- Preheat oven to 400°F. Scoop out seeds from each zucchini half using a spoon.
- Cook sausage in a large skillet over medium-high heat until brown and crumbly.
- Combine sausage, marinara sauce, garlic, and ¼ cup cheese. Spoon mixture into each zucchini half, pressing to fill evenly; sprinkle with ½ cup cheese.
- Place zucchini on a foil-lined baking sheet. Bake 15 to 20 minutes or until zucchini is tender.
Side Dish Ingredients
- 1 (5-oz) pkg baby arugula
- ¼ cup balsamic vinaigrette
- ½ tsp freshly ground pepper
- 1 (13-oz) loaf whole wheat French bread, heated
Side Dish Instructions
- Toss together arugula, vinaigrette, and pepper in a large bowl. Serve salad and bread on the side.
