Ingredients

  • 3 sweet Italian sausage links
  • 1½ Tbsp olive oil
  • ½ (22-oz) pkg frozen tricolor pepper and onion medley
  • 1 clove garlic, minced
  • ½ (14.5-oz) can diced tomatoes
  • ½ tsp Italian seasoning
  • ¼ tsp pepper
  • ⅛ tsp salt

Instructions

  1. Cook sausage in hot oil in a skillet over medium heat 6 minutes or until browned, turning occasionally. Remove from heat; keep warm.
  2. Add vegetables and garlic to skillet; sauté 5 minutes or until tender. Stir in tomatoes, seasoning, pepper, and salt; return sausages to skillet. Cover and simmer 8 to 10 minutes or until sausage is done.

Side Dish Ingredients

  • 1 (12-oz) pkg frozen mashed cauliflower
  • ⅓ cup shredded sharp Cheddar cheese
  • 1 green onion, chopped
  • 1 Tbsp butter

Side Dish Instructions

  1. Microwave cauliflower according to package directions. Stir in remaining ingredients.
