Sweet Italian Sausage with Peppers and Onions

Ingredients
- 3 sweet Italian sausage links
- 1½ Tbsp olive oil
- ½ (22-oz) pkg frozen tricolor pepper and onion medley
- 1 clove garlic, minced
- ½ (14.5-oz) can diced tomatoes
- ½ tsp Italian seasoning
- ¼ tsp pepper
- ⅛ tsp salt
Instructions
- Cook sausage in hot oil in a skillet over medium heat 6 minutes or until browned, turning occasionally. Remove from heat; keep warm.
- Add vegetables and garlic to skillet; sauté 5 minutes or until tender. Stir in tomatoes, seasoning, pepper, and salt; return sausages to skillet. Cover and simmer 8 to 10 minutes or until sausage is done.
Side Dish Ingredients
- 1 (12-oz) pkg frozen mashed cauliflower
- ⅓ cup shredded sharp Cheddar cheese
- 1 green onion, chopped
- 1 Tbsp butter
Side Dish Instructions
- Microwave cauliflower according to package directions. Stir in remaining ingredients.
