Crisp Apple and Chicken Romaine Salad

Ingredients
- 4 slices bacon, chopped
- ½ lb boneless, skinless chicken breasts
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 romaine lettuce heart, chopped
- 1 apple, cored and chopped
- ¼ cup thinly sliced red onion
- ¼ cup chopped walnuts
- ¼ cup freshly shredded Parmesan cheese
- ¼ cup balsamic vinaigrette
Instructions
- Cook bacon in a skillet over medium heat 6 to 8 minutes or until crisp; drain, reserving 2 tsp drippings in skillet.
- Meanwhile, cut chicken in half crosswise, and pound to an even thickness between plastic wrap using a meat mallet. Sprinkle with salt and pepper.
- Cook chicken in hot drippings in skillet over medium-high heat 5 to 6 minutes per side or until done; slice chicken.
- Toss together lettuce, apple, onion, nuts, cheese, bacon, and chicken. Divide between 2 plates; drizzle with dressing.
