Crisp Apple and Chicken Romaine Salad

Ingredients

  • 4 slices bacon, chopped
  • ½ lb boneless, skinless chicken breasts
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 romaine lettuce heart, chopped
  • 1 apple, cored and chopped
  • ¼ cup thinly sliced red onion
  • ¼ cup chopped walnuts
  • ¼ cup freshly shredded Parmesan cheese
  • ¼ cup balsamic vinaigrette

Instructions

  1. Cook bacon in a skillet over medium heat 6 to 8 minutes or until crisp; drain, reserving 2 tsp drippings in skillet.
  2. Meanwhile, cut chicken in half crosswise, and pound to an even thickness between plastic wrap using a meat mallet. Sprinkle with salt and pepper.
  3. Cook chicken in hot drippings in skillet over medium-high heat 5 to 6 minutes per side or until done; slice chicken.
  4. Toss together lettuce, apple, onion, nuts, cheese, bacon, and chicken. Divide between 2 plates; drizzle with dressing.
