Cheesy Sausage Gnocchi
Roasted Broccoli and Mushrooms

Ingredients
- 2 (12-oz) pkg gnocchi
- ¼ cup butter, melted
- 1 (19-oz) pkg hot Italian pork sausage links, casings removed
- 1 (24-oz) jar marinara sauce
- 1 cup chicken broth
- 1 (8-oz) pkg sliced fresh mozzarella cheese
Instructions
- Preheat oven to 425°F. Toss together gnocchi and melted butter on a large rimmed baking sheet; bake 15 minutes or until gnocchi is toasted.
- Meanwhile, cook sausage in a large skillet over medium heat until browned and crumbly; drain, and return to skillet.
- Add marinara sauce and broth; bring to a boil, reduce heat, and simmer 5 minutes. Stir in gnocchi. Top with cheese. Cover and cook until cheese is melted.

- 1 (8-oz) pkg whole mushrooms
- 3 Tbsp olive oil
Side Dish Instructions
- Preheat oven to 425°F. Toss together broccoli, mushrooms, and oil on a large rimmed baking sheet. Bake 12 minutes or until vegetable are browned and tender. Season with salt and pepper, if desired.
