Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 1 (16-oz) jar hamburger dill chips, divided
  • ¾ cup all purpose flour
  • ¾ cup panko breadcrumbs
  • 3 Tbsp cornstarch
  • 1 Tbsp Creole seasoning
  • 2 large eggs
  • ½ cup buttermilk
  • Olive oil cooking spray
  • 3 hamburger buns, split and toasted
  • ¼ cup chipotle aioli
  • 3 leaves green leaf lettuce

Instructions

  1. Cut chicken into 3 equal pieces and pound to an even thickness between plastic wrap using a meat mallet. Place chicken in a large zip-top plastic bag and add juice from pickle jar. Seal bag, and refrigerate at least 2 hours or up to 4 hours.
  2. Remove chicken from marinade; discard marinade.
  3. Stir together flour, breadcrumbs, cornstarch, and seasoning in a bowl. Whisk together eggs and buttermilk in a separate bowl.
  4. Dredge chicken in flour mixture, shaking off excess. Dip in egg mixture to coat. Return to flour mixture, pressing gently to adhere. Place coated chicken on a lightly greased wire rack; let stand 15 minutes to set crust.
  5. Heat air fryer for 10 min at 390°F. Coat top of chicken with olive oil cooking spray. Place chicken, sprayed-side down in air fryer basket. Coat top of chicken with olive oil cooking spray. Air fry 6 minutes. Carefully flip chicken, and air fry 6 minutes longer or until chicken is done.
  6. Serve chicken on buns with aioli, lettuce, and pickles.
