Korean Beef Stir Fry

Sesame Broccoli Rice

Ingredients

  • 1 lb ground sirloin 
  • 2 small cloves garlic, minced
  • 1½ Tbsp natural rice vinegar
  • 1½ Tbsp less sodium soy sauce
  • 1 Tbsp honey
  • ¼ tsp ground ginger
  • ¼ tsp crushed red pepper
  • ½ English cucumber, thinly sliced
  • ¾ cup shredded carrots
  • 2 green onions, chopped

Instructions

  1. Cook beef and garlic in a nonstick skillet over medium-high heat 8 minutes or until browned and crumbly.
  2. Combine vinegar, honey, soy sauce, ginger, and pepper; add to skillet. Cook 2 minutes or until thoroughly heated.
  3. Serve beef mixture over Sesame Broccoli Rice recipe; top with cucumber, carrots, and green onions.

Side Dish Ingredients

  • 1 (10-oz) pkg frozen riced broccoli
  • ½ Tbsp dark sesame oil
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1.  Cook broccoli according to package directions; toss with oil, salt, and pepper.
