Picadillo Lettuce Wraps

Ingredients

  • 1½ lb ground beef
  • 1 onion, chopped
  • ¼ cup less sodium beef broth
  • 1 Tbsp red wine vinegar
  • 2 cloves garlic, minced
  • 1 (14.5-oz) can fire roasted diced tomatoes, drained
  • ¼ cup golden raisins
  • ¼ cup pitted kalamata olives, coarsely chopped
  • 1 tsp paprika
  • ½ tsp salt
  • 1 head Bibb lettuce

Instructions

  1. Cook beef and onion in a large nonstick skillet over medium heat 6 minutes or until beef is browned and crumbly; drain and return to skillet.
  2. Add broth, vinegar, and garlic; cook 5 minutes or until liquid is almost evaporated.
  3. Add tomatoes, raisins, olives, paprika, and salt; cook 3 minutes or until thick.
  4. Separate lettuce leaves; fill leaves with beef mixture.
