Picadillo Lettuce Wraps

Ingredients
- 1½ lb ground beef
- 1 onion, chopped
- ¼ cup less sodium beef broth
- 1 Tbsp red wine vinegar
- 2 cloves garlic, minced
- 1 (14.5-oz) can fire roasted diced tomatoes, drained
- ¼ cup golden raisins
- ¼ cup pitted kalamata olives, coarsely chopped
- 1 tsp paprika
- ½ tsp salt
- 1 head Bibb lettuce
Instructions
- Cook beef and onion in a large nonstick skillet over medium heat 6 minutes or until beef is browned and crumbly; drain and return to skillet.
- Add broth, vinegar, and garlic; cook 5 minutes or until liquid is almost evaporated.
- Add tomatoes, raisins, olives, paprika, and salt; cook 3 minutes or until thick.
- Separate lettuce leaves; fill leaves with beef mixture.
