Spinach-Feta Cheese Mini Quiches
Lemon-Splashed CantaloupeIngredients
- ½ cup chopped onion
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- 1 (5-oz) pkg baby spinach
- 8 large eggs
- ½ cup crumbled feta cheese
- ½ tsp pepper
- ¼ tsp salt
Instructions
- Preheat oven to 425°F. Cook onion and garlic in hot oil in a large nonstick skillet over medium-high heat 4 to 6 minutes or until onion is tender. Add spinach; cook 2 to 3 minutes or until wilted.
- Coat 4 (8-oz) ramekins with cooking spray. Divide spinach mixture among ramekins.
- Whisk together eggs, cheese, pepper, and salt in a large bowl. Top spinach mixture with egg mixture. Bake 12 to 15 minutes or until puffed and set in center.
- Cool in ramekins 10 minutes; run a knife around edges to remove quiches.
