Spinach-Feta Cheese Mini Quiches

Ingredients

  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 (5-oz) pkg baby spinach
  • 8 large eggs
  • ½ cup crumbled feta cheese
  • ½ tsp pepper
  • ¼ tsp salt

Instructions

  1. Preheat oven to 425°F. Cook onion and garlic in hot oil in a large nonstick skillet over medium-high heat 4 to 6 minutes or until onion is tender. Add spinach; cook 2 to 3 minutes or until wilted.
  2. Coat 4 (8-oz) ramekins with cooking spray. Divide spinach mixture among ramekins.
  3. Whisk together eggs, cheese, pepper, and salt in a large bowl. Top spinach mixture with egg mixture. Bake 12 to 15 minutes or until puffed and set in center.
  4. Cool in ramekins 10 minutes; run a knife around edges to remove quiches.

  • 1 Tbsp lemon juice
  • ½ tsp honey

Side Dish Instructions

  1. Toss together cantaloupe, lemon juice, and honey.
