Egg, Sausage, and Cheese Lettuce Wraps

Ingredients

  • ½ lb lean ground turkey breakfast sausage
  • 1 Tbsp olive oil
  • 1 cup thinly sliced onion
  • 1 tomato, chopped
  • 1 clove garlic, minced
  • 8 large eggs
  • ¼ tsp salt
  • ¼ tsp pepper
  • 4 romaine lettuce leaves
  • ½ cup shredded Cheddar cheese

Instructions

  1. Cook sausage in a large nonstick skillet over medium-high heat 10 minutes or until browned and crumbly. Remove sausage from skillet; keep warm.
  2. Add oil and onion to same skillet; cook 7 minutes or until onion is tender, stirring occasionally.
  3. Add sausage, tomato, and garlic; reduce heat to medium, and cook 3 minutes.
  4. Meanwhile, whisk together eggs, salt, and pepper.
  5. Pour egg mixture over sausage mixture in pan; cook 2 minutes, without stirring, until mixture begins to set on bottom.
  6. Using a spatula, gently push eggs towards center of skillet. Repeat motion every 30 seconds until eggs are cooked to desired doneness.
  7. Spoon egg mixture into lettuce leaves; top with cheese. Roll up to serve.
