Egg, Sausage, and Cheese Lettuce Wraps

Ingredients
- ½ lb lean ground turkey breakfast sausage
- 1 Tbsp olive oil
- 1 cup thinly sliced onion
- 1 tomato, chopped
- 1 clove garlic, minced
- 8 large eggs
- ¼ tsp salt
- ¼ tsp pepper
- 4 romaine lettuce leaves
- ½ cup shredded Cheddar cheese
Instructions
- Cook sausage in a large nonstick skillet over medium-high heat 10 minutes or until browned and crumbly. Remove sausage from skillet; keep warm.
- Add oil and onion to same skillet; cook 7 minutes or until onion is tender, stirring occasionally.
- Add sausage, tomato, and garlic; reduce heat to medium, and cook 3 minutes.
- Meanwhile, whisk together eggs, salt, and pepper.
- Pour egg mixture over sausage mixture in pan; cook 2 minutes, without stirring, until mixture begins to set on bottom.
- Using a spatula, gently push eggs towards center of skillet. Repeat motion every 30 seconds until eggs are cooked to desired doneness.
- Spoon egg mixture into lettuce leaves; top with cheese. Roll up to serve.
