Cashew Beef and Cabbage Bowls

Ingredients

  • 2 cloves garlic, minced
  • 1 Tbsp minced ginger
  • 1 Tbsp dark sesame oil, divided
  • ½ cup sliced onion
  • 1 lb ground sirloin
  • 1 carrot, shredded
  • ¼ cup cashews
  • 2 Tbsp lime juice
  • 1½ Tbsp honey
  • 1½ Tbsp less sodium soy sauce
  • 1 (10-oz) pkg shredded coleslaw

Instructions

  1. Cook garlic and ginger in 2 tsp hot oil in a large nonstick skillet over medium-high heat 1 to 2 minutes, stirring.
  2. Add onion; cook 4 to 6 minutes or until browned. Add beef; cook 6 to 8 minutes or until browned and crumbly. Stir in carrot, nuts, lime juice, honey, soy sauce, and 1 tsp oil.
  3. Divide coleslaw among 4 bowls; top with beef mixture.
