Roast Beef and Veggie Roll-Ups
Balsamic TomatoesIngredients
- ½ cup mayonnaise
- 1 to 2 Tbsp prepared horseradish
- 1 Tbsp lemon juice
- 1 lb thinly sliced low sodium roast beef
- ½ (5-oz) pkg arugula
- 1 red bell pepper, thinly sliced
- 2 carrots, cut into sticks
- 1 small zucchini, cut into sticks
Instructions
- Combine mayonnaise, horseradish, and lemon juice.
- Stack roast beef slices in 8 piles on a work surface. Top roast beef with mayonnaise mixture, arugula, bell pepper, carrots, and zucchini. Roll up; secure with wooden picks.

- 3 tomatoes, sliced
- 2 Tbsp balsamic vinegar
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Drizzle tomatoes with vinegar; sprinkle with salt and pepper.
