Roast Beef and Veggie Roll-Ups

Ingredients

  • ½ cup mayonnaise
  • 1 to 2 Tbsp prepared horseradish
  • 1 Tbsp lemon juice
  • 1 lb thinly sliced low sodium roast beef
  • ½ (5-oz) pkg arugula
  • 1 red bell pepper, thinly sliced
  • 2 carrots, cut into sticks
  • 1 small zucchini, cut into sticks

Instructions

  1. Combine mayonnaise, horseradish, and lemon juice.
  2. Stack roast beef slices in 8 piles on a work surface. Top roast beef with mayonnaise mixture, arugula, bell pepper, carrots, and zucchini. Roll up; secure with wooden picks.

  • 3 tomatoes, sliced
  • 2 Tbsp balsamic vinegar
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Drizzle tomatoes with vinegar; sprinkle with salt and pepper.
