Sweet Italian Sausage and Cauliflower Bake

Ingredients

  • 1 (12-oz) pkg cauliflower florets
  • ½ lb ground sweet Italian sausage
  • ½ cup chopped onion
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • ¾ cup marinara sauce
  • ¼ cup pitted kalamata olives, coarsely chopped
  • ½ cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F. Cook cauliflower according to package directions.
  2. Meanwhile, cook sausage, onion, and garlic in hot oil in a skillet over medium-high heat 4 to 6 minutes or until sausage is browned and crumbly.
  3. Stir in cauliflower, marinara sauce, and olives. Spoon into a lightly greased 9-inch baking dish. Top with cheese.
  4. Bake 18 to 20 minutes or until browned and bubbly.

  • ½ (9-oz) pkg romaine salad blend
  • ¼ cup balsamic vinaigrette

  1. Toss together salad and vinaigrette in a medium bowl just before serving.
