Ingredients

  • 1 (32-oz) pkg cubed sweet potatoes
  • 1 large red onion, cut into wedges
  • ¼ tsp salt
  • ½ tsp pepper
  • 3 Tbsp olive oil, divided
  • 6 chicken and apple smoked sausage links
  • 1 Tbsp whole grain mustard
  • 1 Tbsp honey
  • 1 Tbsp apple cider vinegar
  • 1 bunch lacinato kale, stemmed and coarsely chopped 

Instructions

  1. Preheat oven to 450°F. Toss potatoes and onion with salt, pepper, and 1 Tbsp oil on a lightly greased rimmed baking sheet.
  2. Bake 10 minutes or until potatoes are just tender; nestle sausage around potatoes and onion.
  3. Bake 10 minutes longer or until sausages begin to brown.
  4. Meanwhile, whisk together 2 Tbsp oil, mustard, honey, and vinegar; massage 2 Tbsp vinaigrette into kale.
  5. Remove baking sheet from oven; add kale, and bake 3 minutes longer or until kale becomes charred in places. Drizzle remaining vinaigrette over potatoes and sausage.
