Sheet Pan Sausage Supper

Ingredients
- 1 (32-oz) pkg cubed sweet potatoes
- 1 large red onion, cut into wedges
- ¼ tsp salt
- ½ tsp pepper
- 3 Tbsp olive oil, divided
- 6 chicken and apple smoked sausage links
- 1 Tbsp whole grain mustard
- 1 Tbsp honey
- 1 Tbsp apple cider vinegar
- 1 bunch lacinato kale, stemmed and coarsely chopped
Instructions
- Preheat oven to 450°F. Toss potatoes and onion with salt, pepper, and 1 Tbsp oil on a lightly greased rimmed baking sheet.
- Bake 10 minutes or until potatoes are just tender; nestle sausage around potatoes and onion.
- Bake 10 minutes longer or until sausages begin to brown.
- Meanwhile, whisk together 2 Tbsp oil, mustard, honey, and vinegar; massage 2 Tbsp vinaigrette into kale.
- Remove baking sheet from oven; add kale, and bake 3 minutes longer or until kale becomes charred in places. Drizzle remaining vinaigrette over potatoes and sausage.
