Lemon-Garlic Shrimp Pasta

Ingredients

  • 1 (16-oz) pkg linguine
  • 2 lb peeled and deveined large raw shrimp
  • ½ tsp kosher salt, divided
  • ½ tsp pepper, divided
  • ¼ cup olive oil
  • 1 Tbsp minced garlic
  • ½ tsp crushed red pepper
  • 1 pint grape tomatoes, halved
  • 2 (8-oz) pkg asparagus tips, cut into 2 inch pieces
  • 2 Tbsp lemon juice
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Cook pasta according to package directions; set aside, and keep warm.
  2. Sprinkle shrimp with ¼ tsp salt and pepper. Cook shrimp in hot oil in a large skillet over medium-high heat 2 minutes or just until done. Remove from skillet and keep warm.
  3. Add garlic and red pepper to skillet; cook 30 seconds. Add tomatoes and asparagus; cook, stirring, 4 minutes. Add lemon juice, parsley, and shrimp; cook 1 minute. Toss with hot cooked pasta. Stir in ¼ tsp salt and pepper.
