Old Bay Salmon
Cajun Dirty "Rice" Pilaf
Ingredients
- 2 lemons
- 2¼ lb salmon filets
- 1½ Tbsp Old Bay seasoning
- 3 Tbsp olive oil
Instructions
- Grate zest and squeeze juice from lemons.
- Rub fish with seasoning. Cook fish, in batches, in hot oil in a nonstick skillet over medium-high heat 4 to 6 minutes per side or until flakes with a fork.
- Sprinkle fish with zest and drizzle with juice.
Side Dish Ingredients
- 2 (10-oz) pkg frozen riced cauliflower
- 3 (3-oz) Cajun style andouille smoked pork sausage links
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 stalks celery, chopped
- 2 cloves garlic, minced
- 1½ tsp salt free Cajun seasoning
- 4 green onions, chopped
Side Dish Instructions
- Cook cauliflower according to package directions; drain.
- Cook sausage, onion, bell pepper, celery, garlic, and seasoning in a large skillet over medium-high heat 5 to 6 minutes or until sausage is browned and crumbly.
- Add cauliflower; cook 3 minutes or until browned. Stir in green onions.
