Old Bay Salmon

Cajun Dirty "Rice" Pilaf

Ingredients

  • 2 lemons
  • 2¼ lb salmon filets
  • 1½ Tbsp Old Bay seasoning
  • 3 Tbsp olive oil

Instructions

  1. Grate zest and squeeze juice from lemons.
  2. Rub fish with seasoning. Cook fish, in batches, in hot oil in a nonstick skillet over medium-high heat 4 to 6 minutes per side or until flakes with a fork.
  3. Sprinkle fish with zest and drizzle with juice.

Side Dish Ingredients

  • 2 (10-oz) pkg frozen riced cauliflower
  • 3 (3-oz) Cajun style andouille smoked pork sausage links
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1½ tsp salt free Cajun seasoning
  • 4 green onions, chopped

Side Dish Instructions

  1. Cook cauliflower according to package directions; drain.
  2. Cook sausage, onion, bell pepper, celery, garlic, and seasoning in a large skillet over medium-high heat 5 to 6 minutes or until sausage is browned and crumbly.
  3. Add cauliflower; cook 3 minutes or until browned. Stir in green onions.
