Ranch Chicken
Fluffy Rice and Green Beans
Ingredients
- 1 lb boneless, skinless chicken breasts
- ¼ tsp salt
- ¼ tsp pepper
- 1 Tbsp olive oil
- 4 oz cream cheese, softened
- ¼ cup milk
- 1 Tbsp gluten free Ranch dressing mix
- ½ tsp hot sauce, optional
Instructions
- Cut chicken in half lengthwise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle with salt and pepper.
- Cook chicken in hot oil in a large nonstick skillet over medium-high heat 5 to 6 minutes per side or until done. Remove from skillet, and keep warm.
- Add cream cheese and milk to skillet, stirring until cheese melts. Stir in dressing mix and, if desired, hot sauce, until blended.
- Serve sauce over chicken.

- Cook rice according to package directions.
- Cook green beans according to package directions; sprinkle with salt and pepper.
