Ranch Chicken

Fluffy Rice and Green Beans

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • 4 oz cream cheese, softened
  • ¼ cup milk
  • 1 Tbsp gluten free Ranch dressing mix 
  • ½ tsp hot sauce, optional

Instructions

  1. Cut chicken in half lengthwise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle with salt and pepper.
  2. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 5 to 6 minutes per side or until done. Remove from skillet, and keep warm.
  3. Add cream cheese and milk to skillet, stirring until cheese melts. Stir in dressing mix and, if desired, hot sauce, until blended.
  4. Serve sauce over chicken.

  • 1 (8-oz) pkg frozen green beans
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Cook green beans according to package directions; sprinkle with salt and pepper.
