Teriyaki Beef and Brussels Sprouts

Ingredients

  • 2 (12-oz) pkg halved Brussels sprouts
  • 3 Tbsp vegetable oil, divided
  • 1 lb flank steak
  • 1½ cup matchstick cut carrots
  • 4 green onions, cut into 1-inch pieces
  • 1 Tbsp minced garlic
  • 1 cup teriyaki sauce

Instructions

  1. Cook Brussels sprouts in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 5 minutes until browned and tender. Remove from skillet, and keep warm.
  2. Meanwhile, thinly slice steak across the grain. Cook steak in 2 Tbsp hot oil in same skillet 5 minutes, stirring occasionally. Add carrots, green onions, and garlic; cook, stirring occasionally, 2 minutes.
  3. Return Brussels sprouts to skillet. Stir in stir fry sauce. Cook until thoroughly heated .

  • 3 (8.8-oz) pouches microwavable jasmine rice

Side Dish Instructions

  1. Heat rice according to package directions.
