Lemony Dill FarroWine Recommendation

Ingredients
- ¾ lb grouper fillets
- ⅛ tsp kosher salt
- ⅛ tsp pepper
- 1 Tbsp plus 2 tsp olive oil, divided
- ½ lemon
- ⅔ cup grape tomatoes, halved
- ¼ cup halved pitted kalamata olives
- 1 Tbsp chopped fresh dill
Instructions
- Sprinkle fish with salt and pepper. Cook fish in 1 Tbsp hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or until fish flakes with a fork.
- Meanwhile, grate zest and squeeze juice from lemon half. Toss together lemon zest, lemon juice, tomatoes, olives, dill, and 3 Tbsp oil. Serve tomato mixture with fish.
