Shredded Pork Tostadas

Ingredients

  • 2 burrito size flour tortillas
  • ½ Tbsp olive oil
  • 1 cup refrigerated carnitas fully cooked pork
  • 1 cup shredded Colby Jack cheese
  • ½ (8-oz) pkg shredded lettuce
  • ¼ red onion, thinly sliced
  • 3 Tbsp sour cream
  • ¼ cup refrigerated pico de gallo

Instructions

  1. Preheat oven to 425°F. Brush tortillas with oil; place on a baking sheet. Bake 8 minutes or until crispy.
  2. Meanwhile, heat pork according to package directions. Divide pork and cheese between tortillas. Bake 5 minutes longer or until cheese is melted.
  3. Top tortillas with lettuce, onion, sour cream, and pico de gallo.
