Shredded Pork Tostadas
Ingredients
- 2 burrito size flour tortillas
- ½ Tbsp olive oil
- 1 cup refrigerated carnitas fully cooked pork
- 1 cup shredded Colby Jack cheese
- ½ (8-oz) pkg shredded lettuce
- ¼ red onion, thinly sliced
- 3 Tbsp sour cream
- ¼ cup refrigerated pico de gallo
Instructions
- Preheat oven to 425°F. Brush tortillas with oil; place on a baking sheet. Bake 8 minutes or until crispy.
- Meanwhile, heat pork according to package directions. Divide pork and cheese between tortillas. Bake 5 minutes longer or until cheese is melted.
- Top tortillas with lettuce, onion, sour cream, and pico de gallo.
