Cheesy Skillet Chicken

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • 1 tsp Montreal steak seasoning
  • 1 Tbsp olive oil
  • ½ (10.5-oz) can cream of chicken soup
  • ½ cup shredded Cheddar cheese, divided
  • 3 Tbsp sour cream
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • ¼ tsp dried thyme

Instructions

  1. Preheat oven to 400°F. Cut chicken in half crosswise and pound to an even thickness between plastic wrap using a meat mallet. Sprinkle with seasoning. Cook in hot oil in an oven-safe skillet over medium-high heat 3 minutes per side or until browned.
  2. Meanwhile, stir together soup, ¼ cup cheese, sour cream, onion powder, garlic powder, and thyme; spoon over chicken.
  3. Transfer skillet to oven, and bake 12 minutes. Sprinkle with remaining cheese. Bake 2 minutes longer.

Side Dish Ingredients

  • 1 (8-oz) pkg thin green beans
  • 1 Tbsp butter
  • ½ (24-oz) pkg refrigerated mashed potatoes

Side Dish Instructions

  1. Steam beans according to package directions; toss with butter. Season with salt and pepper, if desired.
  2. Heat potatoes according to package directions.
