Cheesy Skillet Chicken
Buttered Green Beans and Mashed Potatoes
Ingredients
- ¾ lb boneless, skinless chicken breasts
- 1 tsp Montreal steak seasoning
- 1 Tbsp olive oil
- ½ (10.5-oz) can cream of chicken soup
- ½ cup shredded Cheddar cheese, divided
- 3 Tbsp sour cream
- ¼ tsp onion powder
- ¼ tsp garlic powder
- ¼ tsp dried thyme
Instructions
- Preheat oven to 400°F. Cut chicken in half crosswise and pound to an even thickness between plastic wrap using a meat mallet. Sprinkle with seasoning. Cook in hot oil in an oven-safe skillet over medium-high heat 3 minutes per side or until browned.
- Meanwhile, stir together soup, ¼ cup cheese, sour cream, onion powder, garlic powder, and thyme; spoon over chicken.
- Transfer skillet to oven, and bake 12 minutes. Sprinkle with remaining cheese. Bake 2 minutes longer.
Side Dish Ingredients
- 1 (8-oz) pkg thin green beans
- 1 Tbsp butter
- ½ (24-oz) pkg refrigerated mashed potatoes
Side Dish Instructions
- Steam beans according to package directions; toss with butter. Season with salt and pepper, if desired.
- Heat potatoes according to package directions.
