Pork with Caper-Mustard Sauce

Ingredients

  • 1½ lb boneless pork chops
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 1½ cups less sodium chicken broth
  • 3 Tbsp capers
  • 2 Tbsp whole grain mustard
  • ½ tsp dried dill

Instructions

  1. Sprinkle pork with salt and pepper. Cook pork in hot oil in a large skillet over medium-high heat 2 minutes per side or until browned.
  2. Add broth; bring to a boil. Stir in capers, mustard, and dill; reduce heat, and simmer until sauce is reduced by half and pork is done.

  • 1 (12-oz) pkg frozen green peas
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook potatoes according to package directions.
  2. Steam peas according to package directions; sprinkle with salt and pepper.
