Pork with Caper-Mustard Sauce
Roasted Potato Wedges and Steamed Peas

Ingredients
- 1½ lb boneless pork chops
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 1½ cups less sodium chicken broth
- 3 Tbsp capers
- 2 Tbsp whole grain mustard
- ½ tsp dried dill
Instructions
- Sprinkle pork with salt and pepper. Cook pork in hot oil in a large skillet over medium-high heat 2 minutes per side or until browned.
- Add broth; bring to a boil. Stir in capers, mustard, and dill; reduce heat, and simmer until sauce is reduced by half and pork is done.

- 1 (12-oz) pkg frozen green peas
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook potatoes according to package directions.
- Steam peas according to package directions; sprinkle with salt and pepper.
