Sun-Dried Tomato Pesto Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • 1 (8.1-oz) jar sun dried tomato pesto
  • 1½ cups heavy cream
  • 1 (10-oz) pkg spinach

Instructions

  1. Cut chicken into 1-inch cubes. Season chicken with salt and pepper, if desired. Cook chicken in hot oil in a large skillet over medium-high heat until browned.
  2. Add pesto and cream to skillet; bring to a boil, reduce heat, and simmer 10 minutes or until slightly thickened.
  3. Gradually stir in spinach until wilted. Serve over Parmesan Linguine recipe.

  • 1 (16-oz) pkg linguine
  • 1 Tbsp olive oil
  • ½ cup shredded Parmesan cheese

Side Dish Instructions

  1. Cook pasta according to package directions. Toss with oil in a large bowl.
  2. Stir in cheese. Season with salt and pepper, if desired.
