Asian Poached Salmon Bowls

Ingredients
- 1 cup water
- 3 green onions, sliced and divided
- 2 Tbsp soy sauce
- 1 Tbsp ginger paste
- 1 Tbsp minced garlic
- ¾ lb salmon fillets
- 1 (10.6-oz) Asian chopped salad kit
Instructions
- Combine water, 2 sliced green onions, soy sauce, ginger and garlic to a skillet with a tight-fitting lid. Bring to a boil, reduce heat, and simmer.
- Season fish with salt and pepper, if desired. Place fish in simmering liquid; cover, and simmer 5 minutes. Flip fish, and simmer 5 minutes longer or to desired doneness. Flake fish into large pieces.
- Meanwhile, prepare salad kit according to package directions; divide among 2 bowls. Top each with desired amount of salmon. Sprinkle with remaining green onion.
