Bacon and Onion Roasted Fingerling Potatoes
Ingredients
- 2 (24-oz) pkg fingerling potatoes, halved
- 1 onion, cut into wedges
- 8 slices bacon, chopped
- 3 Tbsp olive oil
- 2 Tbsp minced fresh thyme
Instructions
- Preheat oven to 400°F. Toss together potatoes, onion, bacon, oil, and thyme on 2 large lightly greased rimmed baking sheets. Spread in a single layer. Season lightly with salt and pepper, if desired.
- Bake 30 to 35 minutes or until potatoes are tender and bacon is crisp.
