Pork Chops and Gravy

Rosemary Sweet Potatoes Wedges and Broccoli

Ingredients

  • 3 (1-inch-thick) bone in pork chops
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • ½ onion, thinly sliced
  • 2 cloves garlic, minced
  • 1½ tsp paprika
  • 1½ tsp Italian seasoning
  • ½ cup less sodium chicken broth
  • 1½ tsp cornstarch
  • 1 Tbsp cold water

Instructions

  1. Sprinkle pork with salt and pepper. Cook pork in hot oil in a large skillet over medium-high heat 3 minutes per side or until browned. Transfer to a 3- to 4-quart slow cooker.
  2. Add onion, garlic, paprika, Italian seasoning, and broth. Cover and cook on LOW 8 hours.
  3. Whisk together cornstarch and cold water; add to cooker.
  4. Increase heat to HIGH, and cook 30 minutes or until gravy is thickened.

Side Dish Ingredients

  • ¾ lb sweet potatoes, cut into ½ inch wedges
  • 2 Tbsp olive oil, divided
  • 1 clove garlic, minced
  • ½ tsp dried crushed rosemary
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 1 (12-oz) pkg broccoli florets

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together potatoes, 1 Tbsp oil, garlic, rosemary, and ¼ tsp each salt and pepper on a large rimmed baking sheet; spread in a single layer. Bake 20 to 25 minutes or until tender.
  2. Meanwhile, cook broccoli according to package directions. Toss with 1 Tbsp oil and ¼ tsp salt and pepper.
