Pork Chops and Gravy
Rosemary Sweet Potatoes Wedges and BroccoliIngredients
- 3 (1-inch-thick) bone in pork chops
- ¼ tsp salt
- ¼ tsp pepper
- 1 Tbsp olive oil
- ½ onion, thinly sliced
- 2 cloves garlic, minced
- 1½ tsp paprika
- 1½ tsp Italian seasoning
- ½ cup less sodium chicken broth
- 1½ tsp cornstarch
- 1 Tbsp cold water
Instructions
- Sprinkle pork with salt and pepper. Cook pork in hot oil in a large skillet over medium-high heat 3 minutes per side or until browned. Transfer to a 3- to 4-quart slow cooker.
- Add onion, garlic, paprika, Italian seasoning, and broth. Cover and cook on LOW 8 hours.
- Whisk together cornstarch and cold water; add to cooker.
- Increase heat to HIGH, and cook 30 minutes or until gravy is thickened.
Side Dish Ingredients
- ¾ lb sweet potatoes, cut into ½ inch wedges
- 2 Tbsp olive oil, divided
- 1 clove garlic, minced
- ½ tsp dried crushed rosemary
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 1 (12-oz) pkg broccoli florets
Side Dish Instructions
- Preheat oven to 450°F. Toss together potatoes, 1 Tbsp oil, garlic, rosemary, and ¼ tsp each salt and pepper on a large rimmed baking sheet; spread in a single layer. Bake 20 to 25 minutes or until tender.
- Meanwhile, cook broccoli according to package directions. Toss with 1 Tbsp oil and ¼ tsp salt and pepper.
