Korean Beef Tacos

Ingredients
- 1½ lb ground sirloin
- 2 (7-oz) pouches Korean stir fry simmer sauce
- 12 soft taco flour tortillas
- 3 Tbsp mayonnaise
- 1 tsp Sriracha
- ½ cup kimchi
- ½ cup roasted, salted peanuts, coarsely chopped
- ¼ cup chopped fresh cilantro
- 1 lime, cut into wedges, optional
Instructions
- Cook beef in a large skillet over medium heat until browned and crumbly; drain and return to skillet. Add simmer sauce; cook 3 to 4 minutes or until thoroughly heated.
- Meanwhile, heat tortillas according to package directions. Stir together mayonnaise and Sriracha.
- Fill tortillas with beef and kimchi. Sprinkle with nuts and cilantro. Serve with mayonnaise mixture and, if desired, lime wedges.

- 1 (16-oz) container cubed pineapple
- 2 Tbsp chopped fresh cilantro
- 1 Tbsp honey
- 1 Tbsp lime juice
