Sausage, Mushroom, and Spinach Pasta

Ingredients
- ½ (12-oz) pkg fully cooked Italian chicken sausage, sliced
- 1 (8-oz) pkg sliced mushrooms
- ½ onion, sliced
- ½ Tbsp minced garlic
- 1 Tbsp olive oil
- 3 cups chicken broth
- 6 oz penne pasta
- 1 (5-oz) container baby spinach
- ½ Tbsp red wine vinegar
- ⅓ cup shredded Parmesan cheese
Instructions
- Cook sausage, mushrooms, onion, and garlic in hot oil in a Dutch oven over medium-high heat 5 minutes, stirring occasionally.
- Add broth and pasta; bring to a boil, reduce heat, and simmer, stirring occasionally until pasta is tender.
- Gradually stir in spinach until wilted; stir in vinegar. Season with salt and pepper, if desired. Sprinkle servings with cheese.

- ½ pint grape tomatoes
- ½ (5-oz) pkg seasoned croutons
- ¼ cup zesty Italian dressing

- Toss together all ingredients in a large bowl just before serving.
