Sausage, Mushroom, and Spinach Pasta

Ingredients

  • ½ (12-oz) pkg fully cooked Italian chicken sausage, sliced
  • 1 (8-oz) pkg sliced mushrooms
  • ½ onion, sliced
  • ½ Tbsp minced garlic
  • 1 Tbsp olive oil
  • 3 cups chicken broth
  • 6 oz penne pasta
  • 1 (5-oz) container baby spinach
  • ½ Tbsp red wine vinegar
  • ⅓ cup shredded Parmesan cheese

Instructions

  1. Cook sausage, mushrooms, onion, and garlic in hot oil in a Dutch oven over medium-high heat 5 minutes, stirring occasionally.
  2. Add broth and pasta; bring to a boil, reduce heat, and simmer, stirring occasionally until pasta is tender.
  3. Gradually stir in spinach until wilted; stir in vinegar. Season with salt and pepper, if desired. Sprinkle servings with cheese.

  • ½ (9-oz) pkg premium romaine salad
  • ½ pint grape tomatoes
  • ½ (5-oz) pkg seasoned croutons
  • ¼ cup zesty Italian dressing
