Homemade Potato Chips with Spicy Ketchup

Ingredients
- 2 lb russet potatoes
- 2 Tbsp olive oil
- 2 tsp salt
- 1¼ tsp pepper, divided
- 1 cup ketchup
- 3 chipotle chile peppers in adobo sauce, minced
Instructions
- Preheat oven to 450°F. Cut potatoes into ¼-inch-thick slices. Toss together potatoes, oil, salt, and 1 tsp pepper. Arrange in a single layer on greased rimmed baking sheets.
- Bake 30 to 40 minutes or until potatoes are golden and crisp.
- Meanwhile, stir together ketchup, chile peppers, and remaining ¼ tsp pepper in a bowl.
- Serve potatoes with spiced ketchup.
