Homemade Potato Chips with Spicy Ketchup

Ingredients

  • 2 lb russet potatoes
  • 2 Tbsp olive oil
  • 2 tsp salt
  • 1¼ tsp pepper, divided
  • 1 cup ketchup
  • 3 chipotle chile peppers in adobo sauce, minced

Instructions

  1. Preheat oven to 450°F. Cut potatoes into ¼-inch-thick slices. Toss together potatoes, oil, salt, and 1 tsp pepper. Arrange in a single layer on greased rimmed baking sheets.
  2. Bake 30 to 40 minutes or until potatoes are golden and crisp.
  3. Meanwhile, stir together ketchup, chile peppers, and remaining ¼ tsp pepper in a bowl.
  4. Serve potatoes with spiced ketchup.
