Spiced Home Fries with Onions and Peppers

Ingredients
- 3 lb Yukon gold potatoes
- 1 red bell pepper
- 1 green bell pepper
- 1 onion
- 3 Tbsp olive oil
- 1 Tbsp minced fresh rosemary
- 1½ tsp smoked paprika
Instructions
- Preheat oven to 425°F. Cut potatoes into 1-inch cubes. Cut peppers and onions into 1-inch pieces. Toss vegetables with oil, rosemary, and paprika in a large bowl. Season with salt and pepper, if desired.
- Spread vegetables in an even layer on 2 lightly greased large rimmed baking sheets. Bake 30 to 35 minutes or until vegetables are browned and crisp.
