Three-Bean Salad

Ingredients

  • 1 (8-oz) pkg thin green beans
  • 1 (15.5-oz) can chickpeas, rinsed and drained
  • 1 (15.5-oz) can kidney beans, rinsed and drained
  • 1 English cucumber, peeled and chopped
  • 1 yellow bell pepper, diced
  • 1 cup diced celery
  • ½ cup diced red onion
  • ½ cup olive oil vinaigrette
  • 1 (0.5-oz) pkg fresh basil, chopped
  • ¼ cup crumbled feta cheese

Instructions

  1. Steam green beans according to package directions; cool, and cut into 1-inch pieces.
  2. Toss together cooled green beans, chickpeas, kidney beans, cucumber, bell pepper, celery, onion, and vinaigrette in a large bowl. Season with salt and pepper, if desired. Sprinkle with basil and cheese.
