Blue Cheese Cobb Salad

Ingredients
- 8 slices bacon, chopped
- 1½ lb boneless, skinless chicken breasts
- 1 (24-oz) pkg classic salad mix
- 3 hard cooked eggs, quartered
- 2 avocados, sliced
- 3 Roma tomatoes, cut into wedges
- 1 English cucumber, thinly sliced
- ½ cup sliced red onion
- 1 cup blue cheese dressing
- ½ cup blue cheese crumbles
Instructions
- Cook bacon in a large skillet over medium heat until crisp; drain on paper towels, reserving 2 Tbsp drippings in skillet.
- Pound chicken to an even thickness between plastic wrap using a meat mallet; season with salt and pepper, if desired.
- Cook chicken in hot drippings over medium heat, 5 to 6 minutes per side or until browned and done. Let stand 5 minutes; chop.
- Divide salad mix among 6 plates. Top with chicken, bacon, eggs, avocado, tomatoes, cucumber, and red onion; drizzle with dressing. Sprinkle with blue cheese.
