Blue Cheese Cobb Salad

Ingredients

  • 8 slices bacon, chopped
  • 1½ lb boneless, skinless chicken breasts
  • 1 (24-oz) pkg classic salad mix
  • 3 hard cooked eggs, quartered
  • 2 avocados, sliced
  • 3 Roma tomatoes, cut into wedges
  • 1 English cucumber, thinly sliced
  • ½ cup sliced red onion
  • 1 cup blue cheese dressing
  • ½ cup blue cheese crumbles

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels, reserving 2 Tbsp drippings in skillet.
  2. Pound chicken to an even thickness between plastic wrap using a meat mallet; season with salt and pepper, if desired.
  3. Cook chicken in hot drippings over medium heat, 5 to 6 minutes per side or until browned and done. Let stand 5 minutes; chop.
  4. Divide salad mix among 6 plates. Top with chicken, bacon, eggs, avocado, tomatoes, cucumber, and red onion; drizzle with dressing. Sprinkle with blue cheese.
