Ham and Cheese Hash Brown Waffles
Honey-Lime Fruit Salad
Ingredients
- 1 (30-oz) pkg frozen shredded hash browns, thawed
- 1 (8-oz) pkg diced ham
- 1 (8-oz) pkg shredded Cheddar cheese
- 1 tsp garlic salt
- 3 large eggs, lightly beaten
- ½ cup Ranch dressing
Instructions
- Place hash browns between layers of paper towels; roll up, and squeeze liquid from potatoes.
- Place potatoes in a large bowl. Stir in ham, cheese, and garlic salt. Add beaten eggs, stirring to combine.
- Preheat waffle iron according to manufacturer's directions. Spray both sides of iron with cooking spray.
- Spoon about 1 cup potato mixture onto waffle iron; close and cook 5 minutes or until browned and crisp. Repeat procedure with remaining potato mixture. Serve waffles with Ranch dressing, if desired.
Side Dish Ingredients
- ½ cantaloupe
- 1 (16-oz) pkg strawberries, sliced
- 1 pint blueberries
- 1 lime
- 2 Tbsp honey
Side Dish Instructions
- Remove seeds from cantaloupe; cut cantaloupe into bite-size chunks.
- Combine strawberries, cantaloupe, and blueberries in a bowl.
- Grate zest and squeeze juice from lime over fruit. Drizzle with honey; toss.
