Ham and Cheese Hash Brown Waffles

Ingredients

  • 1 (30-oz) pkg frozen shredded hash browns, thawed
  • 1 (8-oz) pkg diced ham
  • 1 (8-oz) pkg shredded Cheddar cheese
  • 1 tsp garlic salt
  • 3 large eggs, lightly beaten
  • ½ cup Ranch dressing

Instructions

  1. Place hash browns between layers of paper towels; roll up, and squeeze liquid from potatoes.
  2. Place potatoes in a large bowl. Stir in ham, cheese, and garlic salt. Add beaten eggs, stirring to combine.
  3. Preheat waffle iron according to manufacturer's directions. Spray both sides of iron with cooking spray.
  4. Spoon about 1 cup potato mixture onto waffle iron; close and cook 5 minutes or until browned and crisp. Repeat procedure with remaining potato mixture. Serve waffles with Ranch dressing, if desired.

Side Dish Ingredients

  • ½ cantaloupe
  • 1 (16-oz) pkg strawberries, sliced
  • 1 pint blueberries
  • 1 lime
  • 2 Tbsp honey

Side Dish Instructions

  1. Remove seeds from cantaloupe; cut cantaloupe into bite-size chunks.
  2. Combine strawberries, cantaloupe, and blueberries in a bowl.
  3. Grate zest and squeeze juice from lime over fruit. Drizzle with honey; toss.
