Ingredients

  • 1½ lb peeled and deveined large, raw shrimp
  • 2 Tbsp blackened seasoning
  • 3 Tbsp butter
  • 10 slices fully cooked bacon, chopped
  • 1 (10-oz) container spring mix salad
  • 2 Granny Smith apples, chopped
  • 1 (3.5-oz) pkg dried cranberries and candied pecans
  • 1 (4-oz) container crumbled blue cheese
  • ⅓ cup balsamic vinaigrette

Instructions

  1. Sprinkle shrimp with seasoning. Melt butter in a large nonstick skillet over medium heat; add shrimp, in batches if necessary, and cook 2 to 3 minutes per side or until done. Heat bacon, if desired.
  2. Meanwhile, toss together spring mix, apples, pecans, cheese, and dressing. Divide salads among 6 plates. Top with shrimp and bacon.
