Bang Bang Shrimp Lettuce Wraps

Ingredients

  • 2 lb peeled and deveined, large raw shrimp
  • ½ tsp pepper
  • 2 Tbsp canola oil
  • ¼ cup sweet chili sauce
  • ¼ cup reduced fat olive oil mayonnaise
  • 2 Tbsp Sriracha
  • 1 Tbsp honey
  • 2 tomatoes, thinly sliced
  • 3 green onions, thinly sliced
  • 12 Bibb or butter lettuce leaves

Instructions

  1. Sprinkle shrimp with pepper. Cook shrimp in hot oil a large nonstick skillet over medium-high heat 2 to 3 minutes per side or until done.
  2. Stir together chili sauce, mayonnaise, Sriracha, and honey in a large bowl. Add shrimp; toss.
  3. Divide shrimp mixture, tomatoes, and green onions among lettuce leaves.

Side Dish Ingredients

  • 1 (16-oz) pkg frozen edamame in pods
  • 2 tsp toasted sesame seeds
  • ½ tsp salt

Side Dish Instructions

  1. Cook edamame according to package directions. Sprinkle with sesame seeds and salt.
