Apple Cider Pork Chops

Buttered Green Beans and Mashed Potatoes

Ingredients

  • 1 lb boneless pork chops
  • ⅓ cup apple cider
  • 1 Tbsp maple syrup
  • 1 tsp Dijon mustard
  • ¼ tsp dried thyme
  • 1 Tbsp butter
  • 1 Tbsp olive oil

Instructions

  1. Pat pork dry with paper towels. Sprinkle lightly with salt and pepper. Whisk together cider, syrup, mustard, and thyme; set aside.
  2. Cook chops in butter and oil in a nonstick skillet over medium heat 5 minutes. turn chops, and add cider mixture to skillet. Cook over medium-low heat 4 to 5 minutes or until pork is done.
  3. Remove pork to a plate; cover with foil. Bring cider mixture to a simmer. Cook until slightly thickened. Spoon over pork chops.

Side Dish Ingredients

  • 1 (8-oz) pkg thin green beans
  • 1 Tbsp butter
  • ½ (24-oz) pkg refrigerated mashed potatoes

Side Dish Instructions

  1. Steam beans according to package directions; toss with butter. Season with salt and pepper, if desired.
  2. Heat potatoes according to package directions.
