Pandesal (Filipino-Style Rolls)
Ingredients
- 1¼ cups milk (110°F)
- 1 (0.25-oz) envelope active dry yeast
- ½ cup plus 2 tsp sugar, divided
- 1 large egg
- ¼ cup butter, softened
- 1 Tbsp kosher salt
- 4 to 4½ cups all purpose flour
- ½ cup plain breadcrumbs
Instructions
- Stir together warm milk, yeast, and 2 tsp sugar in a bowl; let stand 5 minutes or until mixture is foamy.
- Meanwhile, beat ½ cup sugar, egg, butter, and salt in a large bowl with a mixer on medium-low speed until blended. Add yeast mixture, beating until blended. Gradually add flour, beating until a soft dough forms.
- Turn out dough onto a lightly floured surface; knead 4 minutes or until dough is smooth and elastic. Place dough in a lightly greased bowl, turning to grease top. Cover loosely, and let stand in a warm place (85°F) for 1 hour or until doubled in size.
- Turn dough out onto a clean surface, and divide into 24 pieces. Shape into balls, and roll in breadcrumbs to coat. Arrange dough balls in a lightly greased 13- x 9-inch baking pan. Cover loosely with plastic wrap and let stand in a warm (85°F), draft-free place, 1 hour or until doubled in size.
- Preheat oven to 350°F. Bake 20 to 25 minutes or until golden brown.
