Pandesal (Filipino-Style Rolls)

Ingredients

  • 1¼ cups milk (110°F)
  • 1 (0.25-oz) envelope active dry yeast
  • ½ cup plus 2 tsp sugar, divided
  • 1 large egg
  • ¼ cup butter, softened
  • 1 Tbsp kosher salt
  • 4  to 4½ cups all purpose flour
  • ½ cup plain breadcrumbs

Instructions

  1. Stir together warm milk, yeast, and 2 tsp sugar in a bowl; let stand 5 minutes or until mixture is foamy.
  2. Meanwhile, beat ½ cup sugar, egg, butter, and salt in a large bowl with a mixer on medium-low speed until blended. Add yeast mixture, beating until blended. Gradually add flour, beating until a soft dough forms.
  3. Turn out dough onto a lightly floured surface; knead 4 minutes or until dough is smooth and elastic. Place dough in a lightly greased bowl, turning to grease top. Cover loosely, and let stand in a warm place (85°F) for 1 hour or until doubled in size.
  4. Turn dough out onto a clean surface, and divide into 24 pieces. Shape into balls, and roll in breadcrumbs to coat. Arrange dough balls in a lightly greased 13- x 9-inch baking pan. Cover loosely with plastic wrap and let stand in a warm (85°F), draft-free place, 1 hour or until doubled in size.
  5. Preheat oven to 350°F. Bake 20 to 25 minutes or until golden brown.
