Low-Country Boil

Ingredients
- 2 gallons water
- 2 (12-oz) bottles beer
- 2 (3-oz) boxes crawfish, shrimp, and crab boil
- 4 lemons, halved
- 3 onions, quartered
- 2 heads garlic, halved crosswise
- ½ cup kosher salt
- ¼ cup Creole seasoning
- 4 bay leaves
- 2 (24-oz) bags small red potatoes, halved
- 2 (12-oz) pkg andouille sausage, cut into 1-inch pieces
- 6 ears corn, halved
- 5 lb large raw shrimp
Instructions
- Combine water, beer, crawfish boil, lemons, onions, garlic, salt, Creole seasoning, and bay leaves in a large stockpot. Bring to a boil over medium-high heat. Add potatoes; boil 8 minutes. Add sausage and corn; boil 5 minutes.
- Add shrimp; boil 3 to 4 minutes or until shrimp are done. Drain, and serve hot.
