Ranch Veggie Roll-Ups

Ingredients

  • 1 (8-oz) block cream cheese, softened
  • 1 cup shredded Cheddar cheese
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 (1-oz) envelope Ranch seasoning mix
  • 8 burrito flour tortillas
  • 1½ cups matchstick carrots
  • 2 cups finely chopped broccoli
  • 1 red bell pepper, finely chopped

Instructions

  1. Beat cream cheese, shredded cheese, mayonnaise, sour cream, and seasoning mix in a bowl with a mixer at medium-low speed until blended. Spread mixture over tortillas.
  2. Sprinkle vegetables over cheese mixture. Roll up tightly into logs, and cut each log into ¾-inch-thick slices. Refrigerate until ready to serve.
