Marinated Polynesian Chicken

Easy Fried Rice and Baked Egg Rolls

Ingredients

  • 2 lb boneless, skinless chicken breasts 
  • ⅓ cup soy sauce
  • 3 Tbsp honey
  • ¼ cup cider vinegar
  • 1 tsp garlic powder
  • 1 tsp ground ginger
  • 2 Tbsp vegetable oil

Instructions

  1. Cut chicken in half crosswise, and pound to an even thickness between plastic wrap using a meat mallet. Add soy sauce, honey, vinegar, garlic powder, and ginger to bag. Seal bag, turning to coat. Refrigerate at least 30 minutes or up to 2 hours.
  2. Remove chicken from marinade; discard marinade.
  3. Cook chicken in hot oil in a large nonstick skillet over medium heat 5 to 6 minutes per side or until done.

  • 1 (12.4-oz) box fried rice mix
  • 1 (24.5-oz) pkg frozen vegetable egg rolls

Side Dish Instructions

  1. Prepare rice according to package directions.
  2. Bake 6 egg rolls according to package directions; serve with 6 Tbsp sauce.
