Cauliflower Steak Gratin

Ingredients

  • 1 large head cauliflower
  • 3 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • 1 cup garlic herb spreadable cheese, softened
  • ¾ cup freshly grated vegetarian Parmesan cheese
  • ½ cup panko breadcrumbs
  • ¼ cup chopped fresh parsley
  • ¼ tsp crushed red pepper

Instructions

  1. Preheat oven to 450°F. Cut cauliflower lengthwise into ¾-inch-thick slabs (some pieces will crumble); arrange in a single layer on a lightly greased large rimmed baking sheet.
  2. Brush both sides of cauliflower with oil; sprinkle with salt and pepper. Bake 15 to 18 minutes or until just tender.
  3. Turn cauliflower steaks; carefully spread with garlic herb cheese. Sprinkle with Parmesan and breadcrumbs.
  4. Bake 10 minutes longer or until cauliflower steaks are golden and topping is hot and bubbly. Sprinkle with parsley and red pepper.

  • 12 oz whole grain spaghetti
  • 1 lemon
  • 1 (6-oz) pkg baby spinach
  • 3 cloves garlic, minced
  • 1 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook pasta according to package directions; drain, reserving ½ cup pasta water, and return to pot. Grate zest and squeeze juice from lemon.
  2. Toss hot cooked pasta, reserved pasta water, lemon zest, juice, spinach, garlic, oil, salt, and pepper over low heat until combined and spinach wilts.
