Cauliflower Steak Gratin
Lemony Spinach Pasta
Ingredients
- 1 large head cauliflower
- 3 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- 1 cup garlic herb spreadable cheese, softened
- ¾ cup freshly grated vegetarian Parmesan cheese
- ½ cup panko breadcrumbs
- ¼ cup chopped fresh parsley
- ¼ tsp crushed red pepper
Instructions
- Preheat oven to 450°F. Cut cauliflower lengthwise into ¾-inch-thick slabs (some pieces will crumble); arrange in a single layer on a lightly greased large rimmed baking sheet.
- Brush both sides of cauliflower with oil; sprinkle with salt and pepper. Bake 15 to 18 minutes or until just tender.
- Turn cauliflower steaks; carefully spread with garlic herb cheese. Sprinkle with Parmesan and breadcrumbs.
- Bake 10 minutes longer or until cauliflower steaks are golden and topping is hot and bubbly. Sprinkle with parsley and red pepper.

- 12 oz whole grain spaghetti
- 1 lemon
- 1 (6-oz) pkg baby spinach
- 3 cloves garlic, minced
- 1 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook pasta according to package directions; drain, reserving ½ cup pasta water, and return to pot. Grate zest and squeeze juice from lemon.
- Toss hot cooked pasta, reserved pasta water, lemon zest, juice, spinach, garlic, oil, salt, and pepper over low heat until combined and spinach wilts.
