Ingredients

  • 2 lb ground beef
  • 1 onion, finely chopped
  • ⅓ cup tomato paste
  • ¼ cup almond flour
  • 1 Tbsp fajita seasoning mix
  • 1 tsp jalapeno paste
  • ½ tsp salt
  • ½ tsp pepper
  • 3 cloves garlic, minced
  • 2 large eggs, lightly beaten

Instructions

  1. Preheat oven to 425°F. Mix together all ingredients in a large bowl until blended.
  2. Place beef mixture in a 9- x 5-inch loaf pan lightly coated in cooking spray.
  3. Bake 55 minutes to 1 hour or until a meat thermometer reads 165°F.

  • 1 (10-oz) pkg angel hair coleslaw
  • ½ cup roasted, salted pepitas
  • ¼ cup chopped fresh cilantro
  • ¼ cup olive oil
  • 3 Tbsp lime juice
  • ¼ tsp salt

  1. Toss together all ingredients in a large bowl.
