Cilantro-Lime Slaw

Ingredients
- 2 lb ground beef
- 1 onion, finely chopped
- ⅓ cup tomato paste
- ¼ cup almond flour
- 1 Tbsp fajita seasoning mix
- 1 tsp jalapeno paste
- ½ tsp salt
- ½ tsp pepper
- 3 cloves garlic, minced
- 2 large eggs, lightly beaten
Instructions
- Preheat oven to 425°F. Mix together all ingredients in a large bowl until blended.
- Place beef mixture in a 9- x 5-inch loaf pan lightly coated in cooking spray.
- Bake 55 minutes to 1 hour or until a meat thermometer reads 165°F.
Side Dish Ingredients
- 1 (10-oz) pkg angel hair coleslaw
- ½ cup roasted, salted pepitas
- ¼ cup chopped fresh cilantro
- ¼ cup olive oil
- 3 Tbsp lime juice
- ¼ tsp salt
Side Dish Instructions
- Toss together all ingredients in a large bowl.
