Ingredients

  • ½ lb flank steak, trimmed
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 Tbsp olive oil
  • 3 Tbsp mayonnaise
  • ¼ cup crumbled blue cheese, divided
  • 1 Tbsp heavy cream
  • ¾ tsp natural rice vinegar
  • 2 cups chopped romaine lettuce
  • 3 cups baby spinach
  • ⅔ cup halved grape tomatoes
  • ¼ cup thinly sliced red onion

Instructions

  1. Preheat oven to 400°F. Sprinkle steak with salt and pepper. Cook steak in hot oil in an ovenproof skillet over medium-high heat 2 minutes per side or until browned.
  2. Transfer skillet to oven, and bake 10 minutes or to desired doneness. Let stand 10 minutes before slicing.
  3. Meanwhile, whisk together mayonnaise, 2 Tbsp cheese, cream, and vinegar.
  4. Divide lettuce and spinach between 2 plates; top with tomatoes, onion, and steak. Drizzle with dressing, and sprinkle with remaining cheese.
