Ingredients
- ½ lb flank steak, trimmed
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 Tbsp olive oil
- 3 Tbsp mayonnaise
- ¼ cup crumbled blue cheese, divided
- 1 Tbsp heavy cream
- ¾ tsp natural rice vinegar
- 2 cups chopped romaine lettuce
- 3 cups baby spinach
- ⅔ cup halved grape tomatoes
- ¼ cup thinly sliced red onion
Instructions
- Preheat oven to 400°F. Sprinkle steak with salt and pepper. Cook steak in hot oil in an ovenproof skillet over medium-high heat 2 minutes per side or until browned.
- Transfer skillet to oven, and bake 10 minutes or to desired doneness. Let stand 10 minutes before slicing.
- Meanwhile, whisk together mayonnaise, 2 Tbsp cheese, cream, and vinegar.
- Divide lettuce and spinach between 2 plates; top with tomatoes, onion, and steak. Drizzle with dressing, and sprinkle with remaining cheese.
