Creamy Feta Chicken
Greek Spinach Orzo
Ingredients
- 1 lb boneless, skinless chicken breasts
- ¼ tsp kosher salt
- ¼ tsp pepper
- 1½ Tbsp olive oil
- ½ lemon
- ¼ cup plain Greek yogurt
- ¼ cup crumbled feta cheese
- 2 Tbsp olive oil mayonnaise
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken in hot oil a large skillet over medium-high heat 5 to 6 minutes per side or until done.
- Meanwhile, grate 1 tsp zest and squeeze 1 Tbsp juice from lemon half. Stir together lemon zest, juice, yogurt, cheese, and mayonnaise in a small bowl until blended; serve with chicken.

- ¾ cup orzo
- ½ (6-oz) pkg baby spinach
- 1 Tbsp olive oil
- ½ tsp salt free Greek seasoning
- ⅛ tsp kosher salt
- ¼ tsp pepper
Side Dish Instructions
- Cook orzo according to package directions. Drain and return to pot. Add spinach, oil, seasoning, salt, and pepper; stir until spinach wilts.
