Creamy Feta Chicken

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • ¼ tsp kosher salt
  • ¼ tsp pepper
  • 1½ Tbsp olive oil
  • ½ lemon
  • ¼ cup plain Greek yogurt
  • ¼ cup crumbled feta cheese
  • 2 Tbsp olive oil mayonnaise

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken in hot oil a large skillet over medium-high heat 5 to 6 minutes per side or until done.
  2. Meanwhile, grate 1 tsp zest and squeeze 1 Tbsp juice from lemon half. Stir together lemon zest, juice, yogurt, cheese, and mayonnaise in a small bowl until blended; serve with chicken.

  • ¾ cup orzo
  • ½ (6-oz) pkg baby spinach
  • 1 Tbsp olive oil
  • ½ tsp salt free Greek seasoning
  • ⅛ tsp kosher salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook orzo according to package directions. Drain and return to pot. Add spinach, oil, seasoning, salt, and pepper; stir until spinach wilts.
