Ingredients

  • ⅓ cup Israeli couscous
  • 1 tsp olive oil
  • 1 tsp salt free Greek seasoning
  • ⅓ cup plain hummus
  • 2 burrito whole wheat tortillas
  • ¼ cup crumbled feta cheese
  • ⅓ cup chopped English cucumber
  • 1 Roma tomato, chopped
  • ¼ cup pitted kalamata olives
  • ¼ cup tzatziki dip

Instructions

  1. Preheat broiler. Cook couscous according to package directions. Stir in oil and seasoning.
  2. Spread hummus on tortillas. Top with cheese, couscous, cucumber, tomato, and olives. Fold in sides of tortillas; roll up to completely enclose filling.
  3. Place burritos in a lightly greased 9-inch baking dish. Broil 2 to 3 minutes or until toasted. Serve with tzatziki dip.
