Toasted Greek Burritos

Ingredients
- ⅓ cup Israeli couscous
- 1 tsp olive oil
- 1 tsp salt free Greek seasoning
- ⅓ cup plain hummus
- 2 burrito whole wheat tortillas
- ¼ cup crumbled feta cheese
- ⅓ cup chopped English cucumber
- 1 Roma tomato, chopped
- ¼ cup pitted kalamata olives
- ¼ cup tzatziki dip
Instructions
- Preheat broiler. Cook couscous according to package directions. Stir in oil and seasoning.
- Spread hummus on tortillas. Top with cheese, couscous, cucumber, tomato, and olives. Fold in sides of tortillas; roll up to completely enclose filling.
- Place burritos in a lightly greased 9-inch baking dish. Broil 2 to 3 minutes or until toasted. Serve with tzatziki dip.
