Sweet Pepper Chicken

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • ½ cup sliced onion
  • ½ red bell pepper, sliced
  • 1 clove garlic, minced
  • 2 Tbsp white wine
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Place chicken in a 3- to 4-quart slow cooker. Add onion, bell pepper, and garlic over chicken. Pour wine over chicken. Sprinkle with salt and pepper.
  2. Cover and cook on LOW 7 to 8 hours.
  3. Shred chicken. Return chicken to cooker; stir. Serve chicken over Baked Sweet Potatoes recipe.

  • 3 sweet potatoes
  • 1½ Tbsp orange juice
  • 1½ Tbsp olive oil
  • 1 tsp honey
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 (5-oz) pkg baby spinach
  • 3 stalks celery, thinly sliced
  • 1 red apple, thinly sliced

Side Dish Instructions

  1. Preheat oven to 400°F. Wrap potatoes in foil; bake 1 hour or until tender.
  2. Whisk together orange juice, oil, honey, salt, and pepper in a bowl. Add spinach, celery, and apples; toss.
