Sweet Pepper Chicken
Baked Sweet Potatoes and Spinach, Celery, and Apple Salad

Ingredients
- 1 lb boneless, skinless chicken breasts
- ½ cup sliced onion
- ½ red bell pepper, sliced
- 1 clove garlic, minced
- 2 Tbsp white wine
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Place chicken in a 3- to 4-quart slow cooker. Add onion, bell pepper, and garlic over chicken. Pour wine over chicken. Sprinkle with salt and pepper.
- Cover and cook on LOW 7 to 8 hours.
- Shred chicken. Return chicken to cooker; stir. Serve chicken over Baked Sweet Potatoes recipe.

- 3 sweet potatoes
- 1½ Tbsp orange juice
- 1½ Tbsp olive oil
- 1 tsp honey
- ¼ tsp salt
- ¼ tsp pepper
- 1 (5-oz) pkg baby spinach
- 3 stalks celery, thinly sliced
- 1 red apple, thinly sliced
Side Dish Instructions
- Preheat oven to 400°F. Wrap potatoes in foil; bake 1 hour or until tender.
- Whisk together orange juice, oil, honey, salt, and pepper in a bowl. Add spinach, celery, and apples; toss.
