Turkey Pitas with Sun-Dried Tomato Pesto
Strawberries and Melon with Fresh Basil
Ingredients
- ¼ cup sun dried tomato pesto
- 2 Tbsp mayonnaise
- 2 whole wheat pita bread rounds, cut in half
- ½ lb thin deli sliced oven roasted turkey breast
- 4 slices mozzarella cheese
- 1 tomato, thinly sliced
- 1 cup baby arugula
- ⅓ cup thinly sliced red onion
Instructions
- Combine pesto and mayonnaise in a small bowl. Spread inside pita halves. Fill pitas with turkey, cheese, tomato, arugula, and onion.
Side Dish Ingredients
- 1 (16-oz) pkg strawberries, halved
- 2 cups cubed honeydew melon
- ¼ cup chopped fresh basil
- 2 Tbsp lemon juice
- 1 Tbsp honey
Side Dish Instructions
- Toss together all ingredients in a medium bowl.
