Turkey Pitas with Sun-Dried Tomato Pesto

Ingredients

  • ¼ cup sun dried tomato pesto
  • 2 Tbsp mayonnaise
  • 2 whole wheat pita bread rounds, cut in half
  • ½ lb thin deli sliced oven roasted turkey breast
  • 4 slices mozzarella cheese
  • 1 tomato, thinly sliced
  • 1 cup baby arugula
  • ⅓ cup thinly sliced red onion

Instructions

  1. Combine pesto and mayonnaise in a small bowl. Spread inside pita halves. Fill pitas with turkey, cheese, tomato, arugula, and onion.

  • 1 (16-oz) pkg strawberries, halved
  • 2 cups cubed honeydew melon
  • ¼ cup chopped fresh basil
  • 2 Tbsp lemon juice
  • 1 Tbsp honey

Side Dish Instructions

  1. Toss together all ingredients in a medium bowl.
