Crispy Gnocchi with Bacon and Mushrooms

Ingredients

  • 6 Tbsp butter
  • 2 (9-oz) pkg gnocchi
  • 12 slices center cut bacon, chopped
  • 1 (16-oz) pkg sliced mushrooms
  • 3 cups grape tomatoes
  • 1½ cups marinara sauce
  • 1½ tsp Italian seasoning

Instructions

  1. Melt 3 Tbsp butter in a large skillet over medium heat. Add 1 pkg gnocchi, spreading in a single layer in skillet. Cook 8 minutes or until crisp and tender, turning to brown on all sides. Remove gnocchi from skillet; keep warm. Repeat with remaining butter and gnocchi.
  2. Meanwhile, cook bacon in a large skillet over medium heat 6 minutes or until crisp. Remove bacon with a slotted spoon, reserving 2 Tbsp drippings in skillet.
  3. Add mushrooms and tomatoes to drippings in skillet, and cook over medium-high heat 8 minutes or until browned and tomatoes begin to burst.
  4. Add toasted gnocchi, sauce, Italian seasoning, and half of bacon to vegetables; cook 3 minutes or until thoroughly heated. Sprinkle remaining bacon on top.

  • 6 cups spinach
  • ⅓ cup balsamic vinaigrette

Side Dish Instructions

  1. Toss together spinach and vinaigrette in a bowl.
