Crispy Gnocchi with Bacon and Mushrooms

Ingredients
- 6 Tbsp butter
- 2 (9-oz) pkg gnocchi
- 12 slices center cut bacon, chopped
- 1 (16-oz) pkg sliced mushrooms
- 3 cups grape tomatoes
- 1½ cups marinara sauce
- 1½ tsp Italian seasoning
Instructions
- Melt 3 Tbsp butter in a large skillet over medium heat. Add 1 pkg gnocchi, spreading in a single layer in skillet. Cook 8 minutes or until crisp and tender, turning to brown on all sides. Remove gnocchi from skillet; keep warm. Repeat with remaining butter and gnocchi.
- Meanwhile, cook bacon in a large skillet over medium heat 6 minutes or until crisp. Remove bacon with a slotted spoon, reserving 2 Tbsp drippings in skillet.
- Add mushrooms and tomatoes to drippings in skillet, and cook over medium-high heat 8 minutes or until browned and tomatoes begin to burst.
- Add toasted gnocchi, sauce, Italian seasoning, and half of bacon to vegetables; cook 3 minutes or until thoroughly heated. Sprinkle remaining bacon on top.

- 6 cups spinach
- ⅓ cup balsamic vinaigrette
Side Dish Instructions
- Toss together spinach and vinaigrette in a bowl.
